Is it possible with mod tools to replace the trees and foliage in the base game with the beta trees and foliage? I’m sure we can find a way to scrape the old assets from the beta.

Yes and no at the same time.
Yes, u can get models and textures from beta. Game archives are encripted but you can use grabber. After that you can convert and replace it in the game.
But it’s not enough for make game graphic and forest look like in beta. In beta were totally another locations, much more trees and vegetations, some lighting effects and sometimes even landshaft are different. Sure, you can change it all by redactor too but how many time will you need?
For ex i added undergrowth from beta. Looks really better but rework whole map … No, need too much time for one man.
