When doing “The Horse That Bolted” I found Pie by following the poop. Before I could mount Pie, a charcoal-burner jumped me and I knocked him out. Could I have prevented this and talked to him, or did I do the quest right?

You obviously need to talk to him in order to talk your way out of it 
Depending on how you found pie and who you talked too, you’ll have a funny dialogue option.

Hes leaning on a tree near pie. Talk to him before you go to pie
