He ordered me to Neuhof and gave me some quests. When does he leave there to return to rattay to offer more combat training? I’d like to learn some more cool moves from him.

If I remember correctly you have to talk to him after the ginger in a pickle quest and then he walks back to Rattaj.
I think I just had to progress a little through the main story to get him back.
