FYI - don’t stop Ulrich by killing his horse. And if you do, don’t loot the horse afterwards. And if you do, don’t put the saddle and bridle on you horse. And if you absolutely have to, then for god’s sake don’t throw away your old worthless saddle and bridle 
The saddle and bridle will disappear from your horse next time you load the game, which leaves you bareback riding on overwhelmed horse.
