Q to block/riposte -> SHIFT-key run towards enemy -> F (press like crazy) -> Stab/Hit on head
Rinse repeat.
Works on every NPC in the entire game.
The reason I think are because AI is not designed for quick maneuvers or fast combat. You’re supposed to stand in front of him and take your time.
Stats to when I could do this throughout the entire game:
8 strength
60 damage (Stab or Slash doesnt matter (Longsword, Hunting sword, Shortsword, Sabre))
atleast 10 defence in everything
Don’t be afraid, just run towards them and time one block…
