Im at the very end, I shot the first Bolder over the wall. Im also waiting on the Patch to fix the Sinew Bow. Should I keep a old save and restart? Will I have enough time to Max out Stealth, Bow and Strength before it comes out in a couple of weeks? Im also curious on on what skills I can max out before being pushed out of Skalitz
Theoretically, you might max out vitality. But I would focus on these while you are in Skalitz: Vitality (running around), Herbalism (it takes roughly 2 hours to pick it all), stealth (robbing houses and people), Drinking (A lot of saving plus not enough money at the trader means you can buy some extra alcohol), Speech (haggling prices).
You can fistfight the two cows over and over again, so vitality, agility and strength are no problem, also fight and fistfight skill are able to max. When the cows go down just come back some time later and they will be healthy again

@Icemanof74 if want to max out, you can also punch the sheep though they die instead of getting KO’ed like the cows.
If you choke out the guards, you can loot their gear. It isn’t high end stuff but decent for the start of the game. I did this 5-10x in HC because I wanted to use the Skalitz waffenrocks and shields from the beginning (sublime mockery by WH). After looting the guards, you can practice your weapon of choice on the sheep too. Just be vigilant.
As the traders don’t have much money, I stored the extra gear in the chest in Henry’s home. Still there when you return during Run

If you had a horse, you would a chance… I didn’t find any way.
