How about in Act II or III we play as a Crusader during the Crusading period, I think it would be very cool.
Eeeeh, yeah I suppose but how would you develop your character? You’re already a crusader, unless you can branch off and do other things and not just hit things, I think it’d suck imo.
The stories of future acts are already set and written. This is more suitable for modding community to do.
And I would definitely play that.

Or better - what mod you wouldn’t play? Acient Rome? Napoleon era? American Revolutionary War?

That would involve going back in time.
The 8th crusade with Louis IX ended in 1270. This game takes place in 1403. So unless you are talking about some of the ‘crusades’ against various pagans or heretics, such as in the low countries, which were minor compared the ones against Islam in the holy land, it would take an entirely different game.
Edit: Or a mod. Which would be super sweet and I would totally play that. But it just can’t happen for the other Acts which are already decided.
The OP didn’t say what crusades he meant.

But anyway, why should that happen?
I just had a realization about what I’d LOVE for a 1100000 stretch goal: Act I.1 
That is: the same map, no new assets, no world-moving events, just a great new questline to make the waiting for Act II more bearable. Admittedly it has a certain DLC feel to it, but as a stretch goal I think it should be free to download at least for some backer tiers.

As stated multiple times in multiple threads and on multiple web pages (FAQs an so on), each Act takes place in another location but all Acts are set in the same period of time. The first game in the Kingdom Come series (Deliverance = Act I + Act II + Act III) revolves around Henry. Also, the clash of Wenzel and Sigismund is used as frame story. Thus in Act II you wouldn’t just pick up your sword and run to Jerusalem or christianize the pagans of the Baltic area or whatever you thought of.
