I really enjoy almost every quest I have came upon in kingdom come. Compared to other games like elder scrolls and the Witcher, KCD have more rememberable quests. I can remember the main quests in elder scrolls and Witcher (and DLCs) but in KCD I can remember the side quests very well because they feel like they really do impact the game and it’s hard to forget. Like side quests in ES and Witcher they are just run around to kill something or get something and then level up but in KCD you are actually gaining reputation and helping NPC/NPCs. Even the hunting quests in KCD are rememberable. For example I helped the hunter out in Rattay and every time I pass him he says hi Henry and I remember the hunt that I did for the quest, what bow and arrows I used and even what forest I went to to hunt down the animals.

That’s really the only reason I’m doing every single side quest even though they pay chump change

Every quest is memorable(Quests and side-quests, we don’t take in count Activities) even if i help sometimes for free, cus some quest givers are need money more, than i do, but the only one lovely for me is “Poverty, Chastity and Obedience” quest. But, sadly, many people are passing this quest just by killing Pious.
