I asked the miller to teach me pickpocketing but failed every time, so I gave up and went to do other things, but now when I go back to him he only says “I’ll stand right here and you try to take my dagger.” (not exact dialogue) but there’s not even a pickpocketing option.

May be some bug, but he eventually got tired of waiting I think, after about one hour.
If he’s locked in this state, are you able to sneak behind and pickpocket him, or doesnt the option ever appears on the bottom right corner ?
Pickpocketing is badly explained since there is no ingame tutorial (already reported issue) ; you have to release the E key after “charging” a few seconds, it will be the time you got to do the stealing part (the dial will change to show a bigger interface).
I said this in the post too, but no, there’s no pickpocketing option. It has been some 3 or 4 in-game days and he doesn’t go back to normal. I’d reset the NPC but I don’t know how (in Skyrim you just bump into them, but that doesn’t work in this game).

Have this exact bug also. Already reported few days ago. Hope it is fixable, Peschek should give some another quests and what i believe there is also binding to another miller (if ou dont pay your debt to Peschek, other miller does not let you continue another quest).
Same problem here, reported long time ago. Pickpocketing wasn’t even working for me, then he left, and without proper training, i can’t do any pickpocketing quests ever. Needs to be solved asap.
I had exactly the same. can’t do any thing. can’t talk, pickpocket. All he does is the same old lines. The option to knock him out does not work. another reason returned to Amazon. Will try again in a few months.
On my PS4 i’ve got the same bug.
