There is czech forum, if you aren’t good in english, this google translated thing does not make sense  I think in the game your character must eat and dringk, as it was said in the vieo, also the food will destroy (rot) after some time… About aging of your hores, I don’t think it will be possible, as the time covers quite short time period, so your horse would not change that much in 2-3 years as horses lives for up to 20 years. Probably would be nice, if you can feed your hores an apple as a treat to for example improve loayality to the player (horse would not go as far from you when not mounted or he can run to you faster after whistle…), probably hores will feed the grass when you walk around or just stay at one place for some time, as they usually do in real life…

I don’t think there will be ‘karma’ as such, but people will react realistically to your actions and dialogue choices, and you will probably build up a reputation (good or bad) as the game goes on.

I’m not an expert concerning horses, but I’m pretty sure horses should have grains, salt and other foods to compliment their diet, specially in the winter when fresh grass is harder to find. Also, warhorses were very specialized and extremely expensive animals. You would want to take very good care of them so they perform at their highest level.
I looked up horse care after I wrote the post. It looks like grains are not necessary in most cases, but I think warhorses can be considered an exception. http://www.aspca.org/pet-care/horse-care/top-10-nutritional-tips-horses
