When you first talk to the lady in the woods about getting items to make the cure for Jerry’s issues she says that the Thistle is pink and prickly, found along the side of the road and sometimes in a clearing. When you ask her about it a second time, she says the thistle is yellow and prickly.
The flower of the thistle itself is pink.
