Is there any side-quests or activities locked after the epilogue? I’m asking, because there is no break in the main story and I think starting a side-quest in the middle of the story would break immersion.

There are few.
I think there are a place or two in the story where you are encouraged to “rest”, that could be a nice place to do some side quests
