I have this quest from the Sassau butcher to bring him 4 Red Deer Livers and I’ve hunted hunted deer for a good bit of time and only get either antlers, venison, or hides. Is there a certain way to get them or a perk? Orr is it bugged for me lol
You need the hunting perk for getting offal from game.

As suggested, once you have the Hunting perk Butcher available from Hunting Level 5;
You’re able to get offal from hunted game.
When I saw the title of this thread, I was going to answer that the liver is found between the diaphragm and the intenstines 
but yeah, you have to have the perk to get the innards.
