He’s the gravedigger who lives near the church.
Well, the gravedigger and the knacker were two different jobs. It’s just that this particular gravedigger does some knackering when there aren’t bodies to bury.
In case you’re curious, the knacker was responsible for removing dead animals, clean up the animals waste from the roads, and occasionally emptying latrines.
It was a dirty job that no one wanted.
