Why would you feel the need to wrestle someone down when they are compliant? If the perp agrees to put his weapons away why would you as a guard go all american police on them? In modern days you don’t wrestle down a compliant perp either. You get them to go down and you only approach when they are on the ground, i honestly doubt it would work the same way in 1400s simply because firearms.
In that instance you wouldn’t need to wrestle them down, but you would still hold on to them so they can’t do anything stupid.
